2 lbs shrimp, peeled and deveined

Shrimp marinade (recipe follows)

Avocado-cilantro sauce (recipe follows)

For the Shrimp Marinade:

1 tbsp hot honey
-
2 tbsps olive oil
-
3 tbsps fresh Lime juice

finely chopped cilantro
-
1/2 tsp chili powder
-
1/2 tsp smoked paprika
-
salt and pepper to taste

For the Avocado-Cilantro Sauce:
-
1 tbsp fresh lime juice
-
Half an avocado
-
1 clove garlic
-
1/4 sour cream
-
Large handful of cilantro leaves
-
2 tbsps water
-
1/2 tsp salt
Directions
- Combine all marinade ingredients except shrimp in a large bowl. Whisk well to combine. Add shrimp and toss to coat shrimp. Refrigerate for 20-30 minutes.
- Heat grill to medium high.
- To make the sauce, combine all ingredients in a blender or food processor and pulse until creamy and no large pieces of cilantro remain. Add additional water to attain desired consistency.
- Place the shrimp on metal skewers, about 5-7 shrimp per skewer.
- Cook shrimp for 2-3 minutes per side or until pink, opaque and lightly charred.
- Serve with the avocado-cilantro sauce, as well as any other side of your choosing.
