Preheat oven to 350 degrees.
- Roast nuts on baking sheet for 8-10 minutes until toasted and fragrant.
- While nuts are in the oven, heat a small skillet over medium heat and add a drizzle of olive oil and saute’ shallots and garlic until golden, the last few minutes of cooking add the rosemary. Place in a small bowl and set aside.
- Melt butter and maple - stir.
- Pour over nuts, add the spices - cayenne pepper, cinnamon, and salt, toss together then add shallot mixture, toss and then taste and adjust seasoning if necessary. Serve warm.
