Grilled Leftover Turkey and Cranberry Sandwiches

Who doesn't love a good grilled cheese? Take your Thanksgiving turkey sandwich to another level by grilling it with this easy recipe.
Ingredients
  • 6 ozs leftover Turkey - thinly sliced or shredded
  • 8 slices of brie, white cheddar, gruyere or other cheese
  • 1/2 cup leftover cranberry sauce
  • 2 tbsps dijon or whole grain mustard
  • 4 slices sourdough or other artisan bread - sliced
  • optional ingredients - fresh arugula, or thinly sliced apple or pear sautéed and softened in a bit of butter, or 2-3 slices crispy bacon
Directions
  1. Spread mustard on one side of each slice of bread.
  2. On two slices of bread layer the turkey (if using bacon or apple layer next) followed by the cheese - place on a sheet pan. If you prefer your cranberry sauce heated then top the turkey slice with cranberry sauce.
  3. Place the other two slices on the sheet pan and place pan in the middle of the oven on broil for 3-5 minutes until cheese is melted. (If you prefer you can toast your sandwich in a skillet with some butter.)
  4. Remove from oven and top the cheese with cranberry sauce if needed and some fresh arugula if using and the top piece of toasted bread. Cut and serve.
