A wonderfully easy and elegant appetizer to pair with a crisp glass of sparkling wine and the arrival of dinner guests.
Ingredients

2 wheels brie cheese

1 loaf of brioche bread

1 Fuji or Granny Smith apple

3 tbsps honeycomb or regular honey

To finish:

Fresh thyme sprigs

Cracked black pepper

Flakey sea salt
Directions
- Refrigerate the brie to easily cut off and remove the rind. Cut into ½ inch cubes and let the brie, without the rind, come to room temperature. Place the softened brie into a food processor and process for 5-8 minutes, stopping to scrape down the sides occasionally. The brie should whip together into a spreadable, softened consistency. Set aside at room temperature while preparing the other elements.
- Cut the brioche into one-inch slices and toast on both sides under a broiler. Cut the slices into toast points and spread the brie onto the toasted points.
- Thinly slice the apple and arrange onto the toast points, followed by small spoonfuls (or a drizzle) of the honeycomb.
- Finish with a few cracks of black pepper, a sprinkling of flaky salt and a few small sprigs of thyme. Enjoy immediately.
