Not your average skewer, this simple marinated sirloin is solid on its own; add our mouth-watering feta sauce and it’s mind-blowingly good. Prep for success: you’ll want these perfectly charred on the outside and tender on the inside.
Ingredients

1 lb sirloin (or cut of your choice), cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

1 pint mixed cherry tomatoes

2 zucchini, cut into half moons

Beef marinade (recipe follows)

Whipped feta sauce (recipe follows)

For the Beef Marinade:
-
1/3 cup olive oil
-
2 tbsps fresh lemon juice
-
1 tsp honey
-
1 tsp dijon mustard
-
1 clove garlic, grated
-
1/4 tsp paprika
-
1/4 tsp cumin
-
1/8 tsp ground coriander
-
Salt and pepper

For the Whipped Feta Sauce:

4 ozs feta in brine, drained

1/2 cup Greek yogurt
-
2 tbsps olive oil
-
Zest and juice of half a lemon
-
1 tbsp mint, roughly chopped
-
1 tbsp parsley, roughly chopped
-
Salt and pepper to taste
Directions
- Prepare the marinade by combining all ingredients in a bowl and mixing well. Add the beef and toss to coat. Cover the bowl with plastic wrap and let them marinate for at least 1 hour in the fridge, or overnight.
- When you are ready to cook the kabobs, place onion, zucchini and tomatoes in a bowl, drizzle with 1 tbsp olive oil and season with salt and ground pepper.
- Thread onto skewers, alternating between meat and vegetables.
- Brush the kabobs lightly with the remaining marinade.
- Heat a grill to high. Cook the kabobs in batches for about 8 minutes, rotating throughout, until you’ve reached your desired doneness.
- Serve with whipped feta sauce and other sides of your choosing.
